Gnocchi with Black Olives
This is such a simple and quick recipe, throw all the ingredients into a baking dish, do some jobs while you wait for it to bake. Perfect for a week night staple recipe.
We have used our Moroccan Black olives which are pitted and bring a rich, briny depth to this dish that pairs beautifully with soft, delicate gnocchi.
Moroccan Black olives are salty and perfect for cooking and adding a depth of flavour to dishes.
With just a handful of ingredients and minimal prep time, this gnocchi with black olives recipe is on the table in under 20 minutes — ideal for those evenings when you want something satisfying without the fuss.
Ingredients
3 x Tablespoons Bell and Loxton Rapeseed Oil
2 x Tablespoons Harissa Paste (Any brand will do)
1 x Red Onion
2 x Garlic Cloves
300g Cherry Tomatoes
500g Pack of Gnocchi
Handful of Fresh basil or Rocket
Method
1. Leave the garlic cloves un peeled and gently squash them, cut the red onion into wedges, leave the tomatoes whole.
2. In a large roasting tin, mix together half the oil and half the harissa with the onion, garlic and tomatoes, along with a pinch of salt and pepper to taste. Spread this out on one side of the roasting tin.
3. On the other half of the tin, mix together the gnocchi with the remaining oil and harissa.
4. Pop into the oven and bake for 25- 30 mins until the gnocchi is crispy and golden and the tomatoes have softened a bit.
5. Toss the gnocchi through the softened vegetables, once cooked add the fresh basil.
Season to taste and enjoy immediately.
