Quick and Easy Healthy Chicken Traybake
We made this recipe using our Mediterranean Triada olives, which is our newest flavour launching just before Christmas.
A trio of green, kalamata and nocellara olives, sundried tomato, garlic and rosemary. A real taste of the med right there.

This quick and easy chicken traybake is so simple, no sauces or complicated steps required.
Everything cooks together on one tray, which means minimal prep, minimal washing up, and maximum flavour.
Roasting the chicken alongside the vegetables allows all the juices and seasonings to mingle, creating a deliciously caramelised finish without the need for added sugar or excess oil.
Absolutely perfect being back to the work/school busy weekly routine!
Ingredients
Feeds 3-4 People
Chicken Thighs
Red onions
Peppers (Any colours)
Whole garlic cloves
Mediterranean Triada olives
Bell and Loxton rapeseed oil
Method
- Roughly chop the red onions and peppers.
- Place all ingredients (except the olives) into a ovenproof dish, leave chicken thighs and garlic cloves whole.
Drizzle with Bell and Loxton rapeseed oil. - Roast until the chicken is cooked through.
- Remove from the oven, stir in the olives pop back in the oven for another 20 minutes approximately.
- To finish crumble over feta cheese.
Serving Suggestions
Serve this chicken traybake on its own for a low-carb option, or pair it with brown rice, quinoa, or a simple green salad for a more filling meal.
