Savoury Pancake with olives

If you’re searching for a dish that’s equal parts comforting, creative, and irresistibly flavourful, this savoury pancake with olives is about to become your new obsession. Unlike the sweet stacks you might be used to, this recipe celebrates bold, Mediterranean-inspired ingredients that transform a humble batter into something truly special. Briny olives bring pops of salty depth, while creamy cheese and fragrant herbs create layers of taste and texture in every bite.

To celebrate Pancake Day we cooked up this Savoury pancake with olives, green pitted olives, feta cheese and Stones Devon Honey the flavour is insane, the salt from the olives and feta and sweet flavour from the honey is the perfect balance and flavour sensation! 

The real surprise comes from the gentle drizzle of Stones Devon honey, the floral sweetness lifts the whole dish and ties the flavours together in a way you wouldn’t expect. 

Savoury pancakes would always be my go to before a sweet pancake, or even better savoury pancake first then a savoury one for pudding. 

Ingredients

Pancake Mix

150g Plain Flour

200ml Milk

2 x Eggs

Butter 

Pancake Filling

Feta Cheese

Green Pitted Olives

Stones Runny Honey 

Method

1. In a bowl mix together the plain flour, milk and eggs until combined.

2. Add a small amount of butter to your pancake and melt.

3. Pour the pancake mix into the middle of the pan and then swirl around the pan to make the mixture even. 

4. Cook until you can move the pancake easily, if you are feeling brave have at flipping the pancake! 

5. Cook the other side until coloured. 

6. Cut or crumble the feta cheese on top of the pancake whilst still in the pan so it starts to slightly melt/cook, chop up your olives and add to the pan, then drizzle some of the honey on the top. 

7. Cook the pancake and take off the heat once you are happy (everyone is different so you not want to completely melt the feta)

Grab a fork and tuck in and let the senses go wild!
